Vegan Protein Cookies

Begin by adding your flax meal and water in a small bowl and set aside to create a flax egg. Next, add all wet ingredients (peanut butter, melted coconut oil, maple syrup, vanilla) to a large bowl. Once all ingredients are prepared, top with your flax egg mixture and whisk until smooth. Next, add in your dry ingredients (almond flour, Birdman Life Falcon Organic Vanilla Plant Based Protein, baking soda, pinch of salt) and give it all a good mix until combined. Top with your macadamia nuts and chocolate, then place in your fridge to fully set for 20 minutes. Next, set your oven to 350°F (175°C), roll the dough into balls, set on a nonstick baking sheet and bake for 7 minutes. Take them out of the oven and tap your pan on your counter to flatten, then place back in the oven for another 3 minutes. Finally, take them out of the oven, and let them cool for 7 minutes before serving!
