This recipe is absolutely delish and so much more simple than you would think. Thanks to Success Rice Boil-in-Bag Brown Rice, it seriously limited the amount of time for the recipe since I wasn’t waiting for my rice to be done.
Notes:
- Do not wash your lion’s mane with water; simply clean off all excess debris and cut any areas needed.
- Your pan should always be a medium-high to high heat for the entire cooking process.
Lion’s Mane Preparation:
1. Begin by heating an iron skillet with 1 tablespoon of vegan butter or oil.
2. Add your clean lion’s mane to the hot skillet and top with your taco seasoning evenly on each side.
3. Once seasoned to your liking, press sternly to remove excess liquid from the mushroom for about 5-10 seconds, and allow it to cook on that side for 3-5 minutes.
4. Flip the mushroom and repeat the press for 3-5 minutes.
5. Once both sides are nice and charred, top your mushroom with another tablespoon of vegan butter or oil and vegan Worcestershire sauce.
6. Repeat the pressing technique again on each side of the lion’s mane and top with your lime juice and extra butter or oil if needed.
Rice Preparation:
1. Cook 1 bag of boil-in-bag brown rice according to the instructions on its packaging.
2. Once cooked, mix in 1/2 of a cilantro leaf pack and the juice from 1 lime. Season with salt to taste.
Beans Preparation:
1. Dice 1/2 yellow onion and mince 3-4 garlic cloves.
2. Heat 2 teaspoons of oil of choice in a pot. Sauté the diced onion and minced garlic until softened.
3. Add 1 can of beans of choice and 1/2 package of vegetable broth. Simmer until heated through and slightly thickened.
Veggies Preparation:
1. Dice 1/2 yellow onion, 1/2 bell pepper, and 1/2 zucchini, and mince 3 garlic cloves.
2. In the same pot or a separate pan, using leftover oil if available, sauté the diced onion, bell pepper, zucchini, and minced garlic until tender.
Assembly:
Assemble in a large flour tortilla by pushing all ingredients to the far edge of the tortilla shell and tucking the edges together while rolling into a burrito! Top with Bitchin Chipotle Sauce, guacamole, and roasted salsa as desired.
