Vegan Pineapple Teriyaki Bowls

1. Cook your rice according to package directions.
2. Slice your pineapple in half. Chop along the base of the pineapple into the shape of a square. Dice the center of the pineapple and take a spoon and take the flesh out. Remove excess juice and set aside.
3. In a medium saucepan at medium heat add 1 tbsp of vegetable oil.
4. Next, add your chicken shreds (cook according to package directions), then add your garlic and cook for 2 minutes.
5. Add the teriyaki sauce, pineapple juice and vegetables. Cook covered for 15 minutes.
6. Lastly, add the pineapple chunks, rice and chick’n mixture to your pineapple shell and enjoy!
