Vegan French Toast Casserole

Set oven to 375 degrees. Begin by adding all custard ingredients (soy milk, sugar, vanilla, and salt) to a sauté pan, omitting the cornstarch slurry, and bring to a slight simmer. Next, whisk in your cornstarch slurry (cornstarch mixed with 1/4 cup water) until nice and thick, around 2 minutes, then set aside. Now, to a large casserole dish, add your sweetened condensed milk (optional) to the base. Top with your bread (sliced in half), then once nice and even, top with your custard. Add 1/4 additional vegan milk to ensure each bread is coated. Lastly, top with fruit (strawberries, raspberries, blueberries, blackberries) and cinnamon. Cover and place in the oven for 25-30 minutes. Serve with fresh powdered sugar.
