Vegan Big Mac Tortilla Burgers with Special Sauce
15 mins prepServes 4
A delicious vegan take on the classic Big Mac, featuring a creamy cashew-based special sauce and plant-based meat patties pressed into flour tortillas, cooked until crispy with melted vegan cheese.
To prepare the Mac Sauce:
1. Combine all cashew cream ingredients (1/2 cup soaked cashews, 1/2 cup vegan milk, 1 tbsp lemon juice, 2-3 cloves garlic, sprinkle of salt) in a blender and blend until smooth. If the mixture is too thick, add an additional 1/4 cup vegan milk and blend again.
2. Once the cashew cream is prepared, add all other Mac Sauce ingredients (1 tbsp ketchup, 1/2 tbsp mustard, 1 tbsp relish or chopped pickles, 1 tsp white vinegar, 1/2 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp paprika, pepper + salt to taste) and mix well.
3. Store the sauce in an airtight container for up to a week.
To prepare the Tortilla Burgers:
1. Begin by spreading 1/4 cup of vegan alternative meat onto the center of a flour tortilla. Press the meat until it's evenly spread on all sides and season the top with pepper.
2. Add the tortilla burger, meat-side down, to an oiled medium-heated skillet and cook for 5-7 minutes.
3. Gently flip the tortilla burger and immediately top the meat with a slice of vegan cheese.
4. Add 1 tablespoon of water to your pan, then quickly cover it with a lid. Turn the heat down to allow the steam to melt the cheese.
5. Serve the tortilla burgers with your desired toppings, but don’t forget to add your delicious homemade Big Mac sauce!
