Vegan Berry “Buttermilk” Bar with Lemon Icing

Preheat oven to 350°F. In a large bowl, mix melted vegan butter, sugar, baking soda, baking powder, vanilla, cinnamon, and almond milk until well combined. Once fully mixed, gradually add in the flour, one bit at a time, mixing until smooth after each addition. Then, add in the berries and gently fold them into the batter. Pour the mixture into an oiled or buttered baking pan. Cook for 35 - 45 minutes, or until a toothpick inserted into the center comes out clean. While the bars cool, combine all icing ingredients (powdered sugar, almond milk, vanilla, lemon juice) in a small bowl, adjusting almond milk to achieve desired consistency. Once the bars have cooled completely, add the lemon icing to the top.
