A homemade vegan apple pie recipe, recreating the iconic McDonald's apple pie as part of a larger vegan McDonald's meal inspiration. This recipe features a flaky pastry dough and a sweet, spiced apple filling.
PREDIRECTIONS: Combine all apple pie filling ingredients, bring to a boil, and then lower to a simmer. Set aside and let cool completely before using.
DIRECTIONS:
1. Start by adding your flour, salt, and cinnamon to a bowl.
2. Cut your cold vegan butter into the flour mixture with a fork until it becomes a sand-like consistency.
3. Next, add your ice cold water 1 tablespoon at a time, mixing until a dough forms.
4. Roll the dough into a ball and place it on a floured surface. Roll the dough out to a 1-inch thickness.
5. Using a tea bag container for shape (or any small rectangular box), begin to cut even rectangular squares from the dough.
6. Add 1 tablespoon of the cooled apple pie filling to the center of one pastry rectangle.
7. Using your finger, gently wet the edges of the pastry dough and add another rectangular dough piece on top.
8. Press the two edges together with your fingers first, and then with a fork to seal.
9. Place 3 slots into the top of the dough, brush with melted vegan butter, and sprinkle sugar and cinnamon on top before baking at 375°F (190°C) for 20-25 minutes.
