Spicy Cajun Pasta

1. Start by adding salt to your diced eggplant and set aside.
2. Begin by adding your diced tofu + your spice blend and 1 tbsp corn starch to a bowl and mix well. Go back to your salted eggplant, pat excess moister with a paper towel, then add to your tofu mixture along with another tbsp of cornstarch.
3. Once full mixed add your tofu + eggplant mixture to your airfryer and airfry @ 400 for 10 mins
4. Next, begin cooking your pasta according to package directions and reserve 1/4 c pasta water.
5. Lastly, combine bellpepper, onion, garlic and 1 tsp Cajun seasoning to a pan with 1/2 tbsp oil. Once fragrant add in your red sauce, red wine, reserved pasta water, noodles, tofu and eggplant.

6 Mix well top with spinach and serve with vegan parm and fresh parsley.
