Ninja Creami Vegan Mint & Lemon Cookie Swirl

Begin by adding all base ingredients (coconut milk, cashews, vegan milk of choice, maple syrup, salt) to a high-powered blender and blend until smooth.

Now, beginning with the lemon cookie flavor, add a portion of your base just below the max line of your Ninja container and add your lemon juice and lemon extract. Whisk and quickly cover, then place in the fridge overnight.

Now with the remaining base, add your mint leaves and mint extract and blend until smooth.

Next, add your mint mixture to another Ninja container, filling to the base line. Cover and add to the freezer overnight.

The next day, remove both pints. Blend the mint flavor on the ice cream setting, adding a splash of vegan milk and remixing if needed to get a creamy consistency. Then add your chocolate cream cookies and chopped vegan chocolate toppings and click the “mix in” button to adequately mix! Once done, enjoy.

For the lemon cookie flavor, add your lemon base to the Ninja Creami Swirl and hit the soft serve feature. Once complete, add to your soft serve section of the Ninja Creami Swirl, push down on the side handle and serve with your crushed ginger snaps!
