These jackfruit nachos are a flavorful vegan alternative to traditional meat nachos, offering a shredded texture that satisfies both vegans and meat-eaters. They feature seasoned jackfruit, melted vegan cheese, and fresh toppings.
1. Drain and shred your jackfruit.
2. Add onion (sliced), garlic, taco seasoning, juice of one lime, and 1/2 to 3/4 cups water. Place all ingredients in a bag and marinate for at least 30 minutes (best if marinated overnight).
3. Cook the marinated jackfruit mixture in 1 tablespoon of oil on medium-high heat for 10-12 minutes until fully heated.
4. While the jackfruit cooks, heat your tortilla chips and vegan cheese in the oven at 350°F (175°C) for 15 minutes.
5. Top the heated chips and melted vegan cheese with the cooked jackfruit mixture, beans, vegan cream (such as cashew cream or vegan sour cream), pico de Gallo, and guacamole. Enjoy!
