Good Luck New Year's Black-Eyed Peas (Vegan)

IF YOU ARE NOT USING AN INSTANT POT: Soak beans the night before.

Directions:

1. Sort through black eye peas to make sure no loose rocks snuck in; then rinse thoroughly.
2. In a large pot, instant pot or slow cooker add all ingredients!
3. Cook in an instant pot according to machine instructions - cook in a large pot up to 5 hours on a medium-low simmer; checking the beans throughout to ensure they aren’t burning at the bottom.

Pro-tip: add more vegetable broth if needed!
