Homemade crispy vegan tenders made from firm tofu, seasoned with a custom spice blend, double-coated in a wet batter and dry flour mix, then deep-fried to golden perfection.
1. Prepare Seasoning Mix: In a small bowl, combine 2 tbsp all purpose seasoning, 2 tbsp chili rub, 1/2 tsp garlic, 1/2 tsp paprika, 1/2 tsp smoked paprika, 1/4 tsp celery salt, and pepper to taste. Mix well.
2. Prepare Tofu: Slice 1 package firm tofu into 4 large logs, then shape each log into chicken tender shapes. Pat tofu dry.
3. Initial Tofu Coating: In a shallow dish, combine 1/2 cup flour and 1 tbsp of the prepared seasoning mix. Coat the tofu tenders evenly with this mixture and set aside.
4. Prepare Dry Coating Mix: In a separate large bowl, combine 1 1/3 cup flour, 2 tbsp corn starch, 2 tbsp baking powder, 1 tsp salt, and the remainder of the prepared seasoning mix. Whisk until well combined. This is your main dry coating mix.
5. Prepare Wet Batter: In another bowl, take 1/2 cup of the prepared dry coating mix. Add 1/4 cup vegan yogurt and 8 fluid ounces sparkling water. Whisk until a smooth batter forms.
6. Set Fryer: Heat frying oil in a deep fryer or large pot to 375 degrees F (190 degrees C).
7. Coat Tofu for Frying: Dip each tofu tender into the wet batter, ensuring it's fully coated, then transfer it to the dry coating mix (from step 4). Press gently to ensure the dry mix adheres. Repeat this wet then dry coating process twice for each tender, ensuring a thick, even crust.
8. Fry Tofu: Carefully place the double-coated tofu tenders into the preheated oil, being careful not to overcrowd the fryer. Fry for 3-5 minutes, flipping occasionally, or until golden brown and crispy.
9. Serve: Remove tenders from oil, place on a wire rack to drain excess oil, and serve immediately.
