Say hello to the perfect springtime obsession! This creamy, frozen treat is literally what dreams are made of - no bananas or fancy machines needed. Thanks to Bored Cow for the extra creaminess!
First, prepare the Lavender Simple Syrup: Add water, sugar, and dried edible lavender to a sauté pan. Simmer for 10 minutes, then remove from heat and let cool. Store in an airtight container for up to 5 days.
For the main dessert: Add the soaked cashews, Bored Cow milk, coconut milk, dates, salt, vanilla, and lemon juice to a high-powered blender and blend until completely smooth.
Next, pour half of this batter into an ice tray and place it in the freezer.
To the remaining half of the batter in the blender, add the berries and the prepared lavender simple syrup. Blend again until smooth.
Pour the berry-lavender mixture into another ice tray (or the remainder of the first ice tray) and freeze both trays overnight.
When ready to serve, add the cashew vanilla flavored frozen cubes back to a blender with a little extra vegan milk and blend until smooth. Transfer to a container. Do the same with the berry-lavender flavored frozen cubes.
Feel free to mix/layer the two flavors or keep them separate. Store in the fridge until desired consistency and enjoy!
