A super simple and easy-to-make creamy and spicy curried ramen dish, packed with flavor and ready in about 25 minutes. It's rich, spicy, and satisfying, using common fridge veggies and a packet of ramen.
Start with a pot, a teaspoon of oil, and curry powder. Add the vegetables (broccoli, cauliflower, onion, carrot), minced garlic, and ginger, then cook until fragrant. Add coconut milk and vegetable broth, and bring the mixture to a boil. Stir in sriracha, salt, and red chili flakes (garlic powder is optional). Bring to a boil again, then add the ramen, cover, and cook for 7-10 minutes, or until the noodles are tender. Serve hot, garnished with lime juice, sriracha, and cilantro. Enjoy this vegan ramen!
