Black Bean Brownies with Coconut Milk Ganache
30 mins prepServes 12
A unique and delicious recipe for brownies made with black beans, incorporating melted chocolate into the batter, and topped with a rich, dairy-free coconut milk ganache. The creator expresses strong obsession with this recipe!
Begin by setting your stove to 350 degrees or the exact temperature for your brownie mix. Next, add your brownie mix, drained black beans, coffee, and vanilla to a blender and blend until smooth. Once completely smooth, add a medium-sized saucepan to the stove and fill halfway with water. Place a glass or metal bowl on top to create a double boiler and once water comes to a boil, bring it down to a simmer and add 1 cup of chocolate chips to the bowl. Stir constantly until just melted, then remove from heat and stir until silky smooth. Add your melted chocolate to your brownie mix, incorporate well, then add to a nonstick or oiled baking pan and bake just till package directions. It’s important to not overcook! Place it out of the oven and allow to completely cool (30 minutes) before placing the ganache on top.
To make your ganache: Add your chocolate chips to a large bowl. Next, heat 1 cup coconut milk on the stove until just simmering - it’s important for it to not be at a complete boil as it may burn the chocolate chips! Once at a simmer, top your chocolate chips with your warm coconut milk and place a plastic covering on top for 15 minutes - the longer the better! Mix well then let it sit at room temperature for 30 minutes to thicken before pouring it on top of your brownies. Once it’s on your brownies, top with sprinkles and set it the fridge to full set (around 1-2 hours), then slice and serve!
